Saffron + Citrus Chia Pudding

Ingredients  

  • Saffron (1/4 tsp threads) 
  • Hot Water (2 tbs) 
  • Coconut Cream (2 tbs) 
  • Chia Seeds - white chias are better for coloring(3 tbs) 
  • Handful sliced Gooseberries 
  • Half sliced orange 
  • Sweetener - I used pomegranate molasses but honey or maple will do great (as much as you like) 
  • Pinch Salt 
  • Hemp Seeds (optional)  
  • Pistachios (optional) 
  • Coconut Yogurt (optional) 
  • Bee Pollen (optional) 
 

 

Process

  • Steep the saffron threads in hot water for about 15 minutes.
  • Mix in the chia seeds, hemp seeds, sweetener, coconut cream and salt - allow them to sit for 15 mins to gel.
  • Mix in smashed citrus.
  • Top with coconut yogurt, gooseberries, pistachios and bee pollen.
