Saffron + Citrus Chia Pudding

Ingredients
- Saffron (1/4 tsp threads)
- Hot Water (2 tbs)
- Coconut Cream (2 tbs)
- Chia Seeds - white chias are better for coloring(3 tbs)
- Handful sliced Gooseberries
- Half sliced orange
- Sweetener - I used pomegranate molasses but honey or maple will do great (as much as you like)
- Pinch Salt

Hemp Seeds (optional)
- Pistachios (optional)
- Coconut Yogurt (optional)
- Bee Pollen (optional)



Process
- Steep the saffron threads in hot water for about 15 minutes.
- Mix in the chia seeds, hemp seeds, sweetener, coconut cream and salt - allow them to sit for 15 mins to gel.
- Mix in smashed citrus.
- Top with coconut yogurt, gooseberries, pistachios and bee pollen.
