Saffron & Rose Popsicles

Ingredients: 

  • 1 can condensed coconut cream 
  • 1/4 cup maple syrup (adjust to taste) 
  • A pinch of saffron threads (about 20-30 threads) 
  • 1 tablespoon warm water 
  • 1 teaspoon rose water 
  • 2 tablespoons crushed pistachios 

  

Instructions: 

  • Prepare the Saffron: In a small bowl, crush the saffron threads with your fingers to release their flavor and aroma. Add the crushed saffron to the warm water and let it steep for about 5-10 minutes to extract the color and flavor.
  • Mix Saffron with Coconut Cream: In a medium-sized mixing bowl, pour the coconut cream. Slowly add the steeped saffron mixture into the coconut cream while continuously mixing with an electric mixer. The saffron should be evenly distributed, creating a lovely golden hue in the coconut cream.
  • Sweeten the Mixture: Add the maple syrup to the saffron-infused coconut cream, and mix again with the electric mixer until the sugar is fully dissolved. Adjust the sweetness to your liking.
  • Add Rose Water: Stir in the rose water into the coconut cream mixture. Rose water has a strong flavor, so adjust the quantity to your preference. It adds a delightful floral note to the popsicles.
  • Add Crushed Pistachios: Gently fold in the crushed pistachios into the coconut cream mixture, reserving some for sprinkling on top later. The pistachios add a delightful crunch and complement the saffron and rose water flavors.
  • Fill the Popsicle Molds: Pour the saffron and rose water coconut cream mixture into popsicle molds. Leave a little space at the top for expansion during freezing. If your popsicle molds come with sticks and lids, insert them now.
  • Freeze the Popsicles: Place the filled popsicle molds in the freezer and allow them to freeze for at least 4-6 hours or until fully set.
  • Serve and Enjoy: Once the popsicles are completely frozen, remove them from the molds. To release them easily, you can briefly run warm water over the outside of the mold. Sprinkle the tops with the remaining crushed pistachios and rose petals for an extra pop of color and flavor. Serve these delightful saffron and rose water coconut cream popsicles on a hot day and savor their unique and refreshing taste!
